Ingredients:
1 med. onion, chopped
1/2 c.
chopped celery (with leaves)
1 clove
garlic, crushed
3 tbsp.
butter
2 (16
oz.) cans crushed tomatoes,
with juice
2 tbsp.
minced parsley
1/4
tsp. each salt, pepper & thyme
1/2 c.
dry white wine (optional)
1 lb.
fresh fillets (any firm fish),
cut into 1/2" cubes
Directions:
Saute onion, garlic and celery in butter until tender. Add tomatoes, wine and seasonings. Cover and simmer for 20 minutes. Add the fish and simmer 10 more minutes.
