Ingredients:
2 c. frozen corn kernels
1/4 c. milk
1/3 c. flour
1 egg
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. butter
2 tbsp. vegetable oil
Directions:
Thaw corn. Place corn in bowl. Add milk, flour, egg, salt, and pepper. Stir to mix. Lay paper towels on top of platter, then set it aside. Place skillet over medium heat. Add butter and oil. When butter melts completely, carefully put 6 rounded spoonfuls of corn mixture into the skillet. Cook 2-3 minutes or until the bottoms are golden brown. Turn over. Cook 2-3 minutes more. Put on paper towels covered platter to drain. Make more corn oysters until all corn mixture is gone.
