Ingredients:
3 1/2 c. (1 1/2 lb.) sugar
2 1/4
c. unsweetened pineapple juice
or any fruit juice
3/4 c.
water
1 box
(1 3/4 oz.) powdered fruit
pectin
1/4 to
1/2 tsp. spearmint extract or
desired mint extract
Directions:
For 5 to 6 ounce glasses of jelly. Measure sugar and set aside. In large saucepan, mix pineapple juice and water. Add fruit pectin mixing well. Stir in a few drops of yellow food coloring to tint mixture. Bring mixture to a hard boil stirring. Stir in sugar bring to a full rolling boil. Boil hard 1 minute stirring constantly. Remove from heat. Add flavoring. Skim off foam with metal spoon. Pour jelly quickly into hot glasses. Cover at once with 1/8 inch hot paraffin. Add lids. Store in cool dry place.
